Here is the recipe that everyone raved about at our 'Rally for a Cure' fundraiser event. Sorry it has taken so long to get posted. Thanks to Joy Vickery for sharing this great recipe:
Layered Ginger Chicken Dip
Sweet-and-Sour Sauce
1 cup water
1/4 cup packed brown sugar
2 tsp cornstarch
1/4 cup ketchup
2 Tbls rice vinegar
1 Tbls Worchestershire Sauce
Tabasco sauce to taste
Chicken Layer
3/4 cup shredded or chopped cooked chicken
1/2 cup shredded carrot
1/4 cup chopped unsalted peanuts
3 Tbls sliced scallions
2 Tbls soy sauce
1 Tbls chopped fresh cilantro
1 Tbls grated fresh gingerroot
1 tsp sesame oil
1 garlic clove, minced
Cream Cheese Layer
8 oz cream cheese, softened
1 Tbls milk
For the sauce, combine the water, brown sugar and cornstarch in a saucepan and mix well. Cook over medium heat until the brown sugar and cornstarch dissolve, stirring frequently. Stir in ketchup, vinegar, worcestershire sauce and tabasco sauce. Simmer until thickened, stirring frequently. Let stand until cool.
For the chicken layer, combine the chicken, carrot, peanuts and scallions in a bowl and mix well. Stir in soy sauce, cilantro, gingerroot, sesame oil and garlic. Chill, covered, in the refrigerator.
For the cream cheese layer, beat the cream cheese and milk in a mixing bowl until light and fluffy, scraping the bowl occasionally.
To assemble, spread the cream cheese mixture over the bottom of a flat 12-inch serving plate. Spread with the chicken mixture. Pour the sauce into a squeeze bottle and drizzle the sauce in a decorative pattern over the top of the prepared layers or drizzle the sauce from a spoon. Chill, covered, until serving time. Serve with rice crackers. (Serves about 8)

Our big fundraiser event "Rally for the Cure" golf tournament is fast approaching on June 18th and we are seeking your assistance. At last years event we received many donations from our membership that helped make that event successful and we are hoping we can count on you again this year. We have a few options on donations that we hope you'll consider:
* Donate items that could become part of gift baskets we plan to put together
* Donate a gift basket already put together
* Donate larger items, ie., last year we had a BBQ, Golf Bag, Prints, Quilt, etc...
All items received will help us in raising money towards this worthy cause. Last year we raised $14,000 and we know with your help, we can meet or even beat that level this year.
If you want to donate items, please contact our WW Board Member, Lisa Small who is leading this effort at: Lsmall@customcpu.com
P.S. If you have not done so yet, sign up yourself or a team to play in this fundraiser golf tournament. Signup sheets are available on this website. The $125 entry fee covers your green and cart fee along with a wonderful BBQ planned afterwards with the remaining ($60) all going towards our donation to this cause.
